- 2 pounds potatoes peeled and sliced
- 6 slices bacon diced
- 1 cup onion chopped
- ¼ cup white vinegar
- ¼ cup water
- 3 tablespoons sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley chopped
1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside.
2. In a skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the skillet.
3. Add the chopped onion to the skillet and cook until softened.
4. Stir in the vinegar, water, sugar, Dijon mustard, salt, and pepper. Bring to a boil.
5. Pour the hot dressing over the potatoes. Add the bacon and parsley, and gently toss to combine.
6. Serve warm or at room temperature.
