Ingredients

  • 2 Avocados ripe
  • 8 Taco Shells
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 tablespoon Lime Juice fresh
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a mixing bowl, mash the avocados.
  2. 2. Add cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper to the bowl. Mix well.
  3. 3. Heat the taco shells in a skillet over medium heat for about 1-2 minutes on each side.
  4. 4. Fill each taco shell with the avocado mixture.
  5. 5. Serve immediately and enjoy!
