Ingredients 

Main Ingredients

  • 2 lbs chicken wings cut into sections
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 2 large potatoes peeled and diced
  • 2 large carrots peeled and sliced
  • 1 large lime juiced
  • 1 Scotch bonnet pepper chopped
  • 1 tablespoon allspice berries
  • 1 tablespoon black peppercorns
  • to taste Salt
  • 6 cups water
  • Fresh parsley chopped (for garnish)

Instructions 

  1. In a large pot, add chicken wings, water, allspice berries, and black peppercorns. Bring to a boil.
  2. Reduce heat and simmer for 20 minutes.
  3. Add onions, garlic, potatoes, carrots, and Scotch bonnet pepper. Continue to simmer for another 20 minutes.
  4. Add lime juice and salt to taste. Simmer for an additional 5 minutes.
  5. Serve hot, garnished with fresh parsley.
