  • 6 large potatoes baked and diced
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 1 bunch green onions chopped
  • to taste salt
  • to taste pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes for 45 minutes or until tender. Let them cool, then dice.
  3. In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, bacon, and green onions.
  4. Fold in the diced potatoes. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 1 hour before serving.
