Ingredients

  • 3 Ripe Bananas mashed
  • cup Melted Butter
  • ½ cup Sugar
  • 1 Egg beaten
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1 pinch Salt
  • 1.5 cups All-purpose Flour

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour last, and mix until just incorporated. Do not over-mix.
  7. Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
