Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • ½ cup Brown sugar packed
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 3 Ripe bananas mashed
  • 1 Egg beaten
  • cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, mix the oats, flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the mashed bananas, beaten egg, vegetable oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
