Ingredients 

Main Ingredients

  • 2 lbs beef bones preferably with some meat on them
  • 1 large onion quartered
  • 2 large carrots cut into chunks
  • 2 stalks celery cut into chunks
  • 2 cloves garlic smashed
  • 1 tablespoon peppercorns
  • 1 gallon water

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.
  2. 2. Transfer roasted bones to a large pot. Add onion, carrots, celery, garlic, peppercorns, and bay leaves.
  3. 3. Pour in water to cover the ingredients. Bring to a boil, then reduce heat to low and simmer for 4 hours.
  4. 4. Skim off any foam or fat that rises to the surface during cooking.
  5. 5. Strain the stock through a fine-mesh strainer. Discard solids.
  6. 6. Let the stock cool, then refrigerate or freeze for later use.
