Ingredients 

Main Ingredients

  • 3 lb Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine optional
  • 4 Carrots cut into chunks
  • 4 Potatoes cut into chunks
  • 1 Onion sliced
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 sprigs Thyme
  • 2 sprigs Rosemary

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
  4. Pour in the red wine to deglaze the pot, scraping up any browned bits. Let it reduce by half.
  5. Return the roast to the pot. Add beef broth, carrots, potatoes, thyme, and rosemary.
  6. Cover and transfer to the oven. Cook for about 3 hours, or until the meat is tender.
  7. Season with salt and pepper to taste before serving.
