Beef Stew with Dumplings Recipe

Stew Ingredients
- 2 lbs Beef Stew Meat cut into chunks
- 2 tablespoon Olive Oil
- 1 large Onion chopped
- 3 cloves Garlic minced
- 4 cups Beef Broth
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 2 tablespoon Tomato Paste
- 1 teaspoon Thyme dried
- 1 teaspoon Rosemary dried
- to taste Salt and Pepper
Dumpling Ingredients
- 2 cups Flour
- 1 tablespoon Baking Powder
- 1 teaspoon Salt
- 1 cup Milk
- 2 tablespoon Butter melted
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
In the same pot, add onions and garlic. Cook until onions are translucent.
Return beef to the pot. Add beef broth, carrots, potatoes, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
For the dumplings, mix flour, baking powder, and salt in a bowl. Stir in milk and melted butter until just combined.
Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15-20 minutes, until dumplings are cooked through.
