Ingredients 

Main Ingredients

  • 4 cups Beets, peeled and chopped
  • 1 cup Carrots, chopped
  • 1 cup Onions, chopped
  • 4 cups Vegetable broth
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions and carrots. Cook until softened, about 5 minutes.
  3. 3. Add chopped beets and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer for 30 minutes, until beets are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and pepper to taste. Serve hot.
