1. In a large mixing bowl, combine 1 cup of flour and yeast. Add warm milk, sugar, melted butter, and salt. Mix well.
2. Add beaten eggs and remaining flour, one cup at a time, until dough is soft and elastic. Knead for about 5-7 minutes.
3. Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
4. In a skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain excess fat.
5. Add shredded cabbage, salt, and pepper to the skillet. Cook until cabbage is tender, about 10 minutes. Remove from heat and let cool.
6. Preheat oven to 375°F (190°C). Punch down dough and divide into 8 equal pieces. Roll each piece into a circle.
7. Place a generous amount of filling in the center of each dough circle. Fold dough over filling and pinch edges to seal.
8. Place bierocks on a greased baking sheet. Bake for 20-25 minutes, or until golden brown.
