Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Salsa
  • 4 Large flour tortillas
  • 1 cup Shredded cheese
  • 1 Avocado, sliced
  • 1 Lime, cut into wedges

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. Add the black beans, corn, and salsa. Cook until heated through, about 5 minutes.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Spoon the black bean mixture onto each tortilla. Top with shredded cheese, avocado slices, and a squeeze of lime.
  7. Roll up the tortillas and serve immediately.
