Ingredients 

Main Ingredients

  • 1 cup rice
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups water
  • ¼ cup cilantro chopped

Instructions 

  1. 1. Heat the olive oil in a pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Stir in the rice, cumin, salt, and black pepper. Cook for 2 minutes, stirring frequently.
  4. 4. Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the water is absorbed.
  5. 5. Stir in the black beans and cook until heated through, about 5 minutes.
  6. 6. Remove from heat and stir in the chopped cilantro. Serve warm.
