Ingredients

  • 1.5 cups peanut butter
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 6 cups powdered sugar
  • 4 cups semisweet chocolate chips
  • 2 tablespoons shortening

Instructions 

  1. 1. In a large mixing bowl, combine peanut butter, butter, and vanilla extract. Beat until smooth.
  2. 2. Gradually add powdered sugar, beating until mixture is smooth and stiff.
  3. 3. Roll into 1-inch balls and place on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
  4. 4. In a microwave-safe bowl, melt chocolate chips and shortening in 30-second intervals, stirring until smooth.
  5. 5. Insert a toothpick into each peanut butter ball and dip into melted chocolate, leaving a small portion of peanut butter visible at the top.
  6. 6. Return to the baking sheet and refrigerate until chocolate is set.
