Ingredients

  • 1 Butternut squash, peeled and cubed
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the butternut squash and chicken broth. Bring to a boil, then reduce heat and simmer until the squash is tender, about 30 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Heat through before serving.
