Ingredients 

Main Ingredients

  • 1 medium head cabbage chopped
  • 1 large onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions 

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the garlic and cook for another minute.
  3. Stir in the chopped cabbage, vegetable broth, water, diced tomatoes, salt, pepper, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove the bay leaf before serving.
