Caldo de Res Beef Soup Recipe
Traditional Mexican beef soup with vegetables.

Main Ingredients
- 2 lbs beef shank, with bone
- 1 onion, quartered
- 2 cloves garlic, minced
- 2 ears corn, cut into thirds
- 2 carrots, peeled and cut into chunks
- 2 potatoes, peeled and cut into chunks
- 1 zucchini, cut into chunks
- 0.5 cabbage, cut into wedges
- 0.25 cup cilantro, chopped
- Salt and pepper to taste
- 8 cups water
In a large pot, add beef shank, onion, garlic, and water. Bring to a boil.
Reduce heat and simmer for 1.5 hours, skimming off any foam.
Add corn, carrots, and potatoes. Cook for 30 minutes.
Add zucchini and cabbage. Cook for another 15 minutes.
Season with salt and pepper. Stir in cilantro before serving.
