Ingredients 

Main Ingredients

  • 1 lb potatoes peeled and diced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 lb kale chopped
  • 0.5 lb chorizo sliced
  • 4 cups chicken broth
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, cook until soft.
  2. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Add kale and chorizo. Cook until kale is tender and chorizo is heated through.
  5. Season with salt and pepper to taste.
