Ingredients

  • 2 cups yellow split peas rinsed and drained
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots chopped
  • 2 stalks celery chopped
  • 1 pound ham hock
  • 8 cups water
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, combine the yellow split peas, onion, garlic, carrots, celery, ham hock, water, thyme, and bay leaf.
  2. 2. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the peas are tender and the soup has thickened.
  3. 3. Remove the ham hock from the pot. Shred the meat and return it to the soup, discarding the bone and any excess fat.
  4. 4. Season with salt and pepper to taste. Serve hot.
