Fish fillets (snapper or any white fish)

Coconut milk

Instructions
1. Heat the oil in a large pot over medium heat.
2. Add the onion, garlic, and bell pepper. Sauté until softened.
3. Add the carrots, potatoes, thyme, and scotch bonnet pepper. Cook for a few minutes.
4. Pour in the coconut milk and fish stock. Bring to a boil.
5. Reduce heat and simmer until vegetables are tender, about 15 minutes.
6. Add the fish chunks and cook until the fish is opaque and cooked through, about 5-7 minutes.
7. Season with salt and pepper to taste. Remove the scotch bonnet pepper before serving.
