Ingredients 

Main Ingredients

  • 1 lb Fish fillets (snapper or any white fish) cut into chunks
  • 1 cup Coconut milk
  • 2 cups Fish stock or water
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 2 Carrots sliced
  • 2 Potatoes diced
  • 1 teaspoon Thyme dried
  • 1 Scotch bonnet pepper whole (optional)
  • to taste Salt and pepper
  • 2 tablespoon Vegetable oil

Instructions 

  1. 1. Heat the oil in a large pot over medium heat.
  2. 2. Add the onion, garlic, and bell pepper. Sauté until softened.
  3. 3. Add the carrots, potatoes, thyme, and scotch bonnet pepper. Cook for a few minutes.
  4. 4. Pour in the coconut milk and fish stock. Bring to a boil.
  5. 5. Reduce heat and simmer until vegetables are tender, about 15 minutes.
  6. 6. Add the fish chunks and cook until the fish is opaque and cooked through, about 5-7 minutes.
  7. 7. Season with salt and pepper to taste. Remove the scotch bonnet pepper before serving.
