Main Ingredients
- 1 lb Beef sirloin, thinly sliced
- 4 slices Bacon, chopped
- 2 cups Water
- 1 cup Pinto beans, cooked
- 1 cup Tomatillos, blended
- 1 clove Garlic, minced
- 0.5 cup Cilantro, chopped
- 1 medium Onion, chopped
- to taste Salt and pepper
1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
2. In the same pot, add the thinly sliced beef and cook until browned.
3. Add the minced garlic and chopped onion to the pot and cook until softened.
4. Pour in the blended tomatillos and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
5. Add the cooked pinto beans and crispy bacon to the pot. Stir to combine.
6. Season with salt and pepper to taste. Stir in the chopped cilantro just before serving.
