Instructions
In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are tender.
Stir in the chicken broth and diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
In a small bowl, whisk together the flour and milk until smooth. Gradually stir into the soup. Cook and stir until the soup is thickened and bubbly.
Stir in the shredded cheddar cheese until melted. Season with salt and black pepper to taste.
Serve hot and enjoy!
