Ingredients 

Brine Ingredients

  • 1 gallon water
  • ½ cup kosher salt
  • ½ cup sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried thyme
  • 4 cloves garlic, crushed

Instructions 

  1. 1. In a large pot, combine water, kosher salt, and sugar. Stir until dissolved.
  2. 2. Add black peppercorns, dried thyme, and crushed garlic. Stir to combine.
  3. 3. Submerge the chicken in the brine. Cover and refrigerate for at least 4 hours, preferably overnight.
  4. 4. Remove chicken from brine, rinse under cold water, and pat dry before cooking.
