Main Ingredients
- 2 cups chicken broth
- 1 cup corn kernels fresh or frozen
- 1 cup cooked chicken shredded
- 1 medium carrot diced
- 1 stalk celery diced
- 1 small onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
1. Heat the olive oil in a pot over medium heat.
2. Add the onion, garlic, carrot, and celery. Cook until softened.
3. Pour in the chicken broth and bring to a boil.
4. Add the corn and shredded chicken. Simmer for 10 minutes.
5. Season with salt and pepper to taste. Serve hot.
