Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Chicken Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Black Beans drained and rinsed
  • 1 cup Tortilla Chips crushed
  • 1 cup Cheddar Cheese shredded
  • 1 cup Cilantro chopped
  • 1 medium Avocado sliced
  • 1 medium Lime cut into wedges

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in shredded chicken, diced tomatoes, chicken broth, ground cumin, chili powder, salt, and black pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Add corn and black beans, and cook for another 5 minutes.
  6. Serve hot, topped with crushed tortilla chips, shredded cheddar cheese, chopped cilantro, sliced avocado, and lime wedges on the side.
