Chicken Tortilla Soup

Main Ingredients
- 2 tablespoon Olive Oil
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 1 lb Chicken Breast, cooked and shredded
- 1 can Diced Tomatoes (14.5 oz)
- 4 cups Chicken Broth
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Corn Kernels fresh or frozen
- 1 cup Black Beans drained and rinsed
- 1 cup Tortilla Chips crushed
- 1 cup Cheddar Cheese shredded
- 1 cup Cilantro chopped
- 1 medium Avocado sliced
- 1 medium Lime cut into wedges
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in shredded chicken, diced tomatoes, chicken broth, ground cumin, chili powder, salt, and black pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Add corn and black beans, and cook for another 5 minutes.
Serve hot, topped with crushed tortilla chips, shredded cheddar cheese, chopped cilantro, sliced avocado, and lime wedges on the side.
