Chinese Chicken Fried Rice
A quick and easy Chinese chicken fried rice recipe that's perfect for a weeknight dinner.

Main Ingredients
- 2 cups Cooked Rice preferably day-old
- 1 cup Cooked Chicken diced
- 2 tablespoon Soy Sauce
- 1 cup Frozen Peas and Carrots
- 2 cloves Garlic minced
- 2 tablespoon Vegetable Oil
- 2 Eggs beaten
- 2 stalks Green Onions sliced
- to taste Salt and Pepper
Heat 1 tablespoon of oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
In the same wok, add the remaining oil. Add minced garlic and cook until fragrant.
Add the diced chicken and cook for 2-3 minutes.
Add the frozen peas and carrots, and cook for another 2 minutes.
Add the cooked rice and soy sauce. Stir-fry for 2-3 minutes until everything is well combined and heated through.
Return the scrambled eggs to the wok and mix well. Season with salt and pepper to taste.
Garnish with sliced green onions and serve hot.
