Ingredients

  • 2 cups chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup baby corn, chopped
  • 1 cup snow peas
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add garlic and ginger, sauté until fragrant.
  2. 2. Add carrots, celery, and baby corn. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. 4. Add the cooked chicken, snow peas, and soy sauce. Simmer for another 5 minutes.
  5. 5. Season with salt and pepper to taste. Serve hot.
