Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 cup All-purpose flour
- 2 large Eggs, beaten
- 1 cup Shredded coconut sweetened or unsweetened
- 1 cup Panko breadcrumbs
- 1 cup Vegetable oil for frying
1. In a bowl, mix flour with a pinch of salt.
2. In another bowl, beat the eggs.
3. In a third bowl, combine shredded coconut and panko breadcrumbs.
4. Dredge each shrimp in flour, then dip in beaten eggs, and coat with the coconut-panko mixture.
5. Heat oil in a frying pan over medium heat.
6. Fry shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
7. Drain on paper towels and serve immediately.
