Ingredients

  • 500 g green beans trimmed
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions 

  1. 1. Bring a pot of water to a boil. Add green beans and cook for 3-4 minutes until tender-crisp. Drain and rinse under cold water.
  2. 2. In a large bowl, combine green beans, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.
  4. 4. Pour dressing over the salad and toss to coat evenly. Serve chilled.
