- 2 cups Corn kernels fresh or frozen
- ½ cup Mayonnaise
- ½ cup Cotija cheese crumbled
- 1 teaspoon Chili powder
- 1 tablespoon Lime juice freshly squeezed
- to taste Salt
- to taste Pepper
1. Cook the corn kernels in the microwave for 3-4 minutes until hot.
2. In a mixing bowl, combine the hot corn, mayonnaise, crumbled Cotija cheese, chili powder, and lime juice.
3. Mix well and season with salt and pepper to taste.
4. Serve immediately in cups and enjoy!
