Ingredients

  • 1 lb crabmeat fresh or canned
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Stir in the paprika and cook for another minute.
  4. 4. Add the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. 5. Add the crabmeat and heavy cream. Simmer for another 10 minutes.
  6. 6. Use a blender to puree the soup until smooth. Return to the pot and heat through.
  7. 7. Season with salt and pepper to taste. Serve hot.
