Ingredients 

Puffs

  • 1 cup water
  • ½ cup butter unsalted
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 4 eggs large

Filling

  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, bring water, butter, and salt to a boil.
  3. Add flour all at once and stir until a smooth ball forms.
  4. Remove from heat and let stand for 5 minutes.
  5. Add eggs one at a time, beating well after each addition.
  6. Drop by tablespoonfuls 3 in. apart onto greased baking sheets.
  7. Bake for 20-25 minutes or until golden brown. Remove to wire racks.
  8. For filling, in a mixing bowl, beat cream until it begins to thicken. Add sugar and vanilla; beat until almost stiff.
  9. Split puffs open; remove tops and set aside. Discard soft dough from inside. Fill the cream puffs just before serving.
