Crustless Spinach Quiche
A simple, delicious crustless quiche packed with spinach and cheese.

Main Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 package frozen chopped spinach, thawed and drained 10 oz package
- 5 eggs beaten
- 3 cups shredded cheese cheddar, mozzarella, or a mix
- 1 cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the spinach to the skillet and cook for another 2 minutes. Remove from heat and set aside.
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the shredded cheese and the spinach mixture.
Pour the mixture into a greased 9-inch pie dish or baking dish.
Bake in the preheated oven for 35 minutes, or until the quiche is set and the top is golden brown.
Let the quiche cool for a few minutes before slicing and serving.
