Instructions
Heat 1 tablespoon of oil in a wok over medium-high heat. Add beaten eggs and scramble until fully cooked. Remove and set aside.
In the same wok, add the remaining oil. Add garlic and stir-fry for 30 seconds.
Add the cooked rice, peas, and carrots. Stir-fry for 3-4 minutes.
Return the scrambled eggs to the wok. Add soy sauce and mix well. Cook for another 2 minutes.
Garnish with chopped green onions and serve hot.
