Ingredients

  • 6 Eggs hard-boiled
  • ¼ cup Mayonnaise
  • 1 tablespoon Mustard
  • 1 tablespoon Chopped Chives
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 8 slices Bread your choice
  • 1 cup Lettuce optional

Instructions 

  1. 1. Peel and chop the hard-boiled eggs.
  2. 2. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, chopped chives, salt, and black pepper. Mix well.
  3. 3. Spread the egg salad mixture onto 4 slices of bread.
  4. 4. Top with lettuce if using, and place the remaining slices of bread on top to form sandwiches.
  5. 5. Serve immediately or refrigerate for later.
