- 6 Eggs hard-boiled
- ¼ cup Mayonnaise
- 1 tablespoon Mustard
- 1 tablespoon Chopped Chives
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 8 slices Bread your choice
- 1 cup Lettuce optional
1. Peel and chop the hard-boiled eggs.
2. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, chopped chives, salt, and black pepper. Mix well.
3. Spread the egg salad mixture onto 4 slices of bread.
4. Top with lettuce if using, and place the remaining slices of bread on top to form sandwiches.
5. Serve immediately or refrigerate for later.
