  • 1 large eggplant sliced into rounds
  • 2 tablespoon olive oil
  • 1 tomato sliced
  • 4 slices mozzarella cheese
  • 4 whole wheat sandwich rolls split

Instructions 

  1. 1. Preheat your grill pan over medium-high heat.
  2. 2. Brush the eggplant slices with olive oil and season with salt and pepper.
