Ingredients 

Main Ingredients

  • 4 ears corn, husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ¼ cup cilantro, chopped
  • 1 clove garlic, minced
  • to taste salt
  • to taste pepper

Instructions 

  1. 1. Preheat grill or skillet over medium-high heat.
  2. 2. Grill the corn until charred, about 10 minutes, turning occasionally.
  3. 3. Cut the corn off the cob and place in a large mixing bowl.
  4. 4. In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, and garlic.
  5. 5. Add the dressing to the corn and mix well.
  6. 6. Stir in cotija cheese and cilantro.
  7. 7. Season with salt and pepper to taste.
  8. 8. Serve immediately or chill in the fridge for later.
