  • 1 large Eggplant sliced into rounds
  • 1 cup All-purpose flour
  • 2 units Eggs beaten
  • 1 cup Breadcrumbs
  • 1 cup Vegetable oil for frying
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Slice the eggplant into rounds and season with salt and pepper.
  2. 2. Dredge the eggplant slices in flour, dip in beaten eggs, and coat with breadcrumbs.
  3. 3. Heat the vegetable oil in a frying pan over medium heat.
  4. 4. Fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side.
  5. 5. Drain on paper towels and serve hot.
