- 2 medium zucchini sliced into rounds
- ½ cup flour
- 2 large eggs beaten
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup vegetable oil for frying
1. Slice zucchini into rounds.
2. In a bowl, mix flour, salt, and pepper.
3. In another bowl, beat the eggs.
4. In a third bowl, combine breadcrumbs and Parmesan cheese.
5. Dredge zucchini in flour, dip in eggs, then coat with breadcrumb mixture.
6. Heat oil in a frying pan over medium heat.
7. Fry zucchini until golden brown, about 2-3 minutes per side.
8. Drain on paper towels and serve warm.
