Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 6 cups Fresh Tomatoes, chopped
  • 2 cups Vegetable Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Fresh Basil, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Add minced garlic and cook for another minute.
  4. 4. Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and black pepper. Stir in chopped basil before serving.
