Garden Fresh Tomato Soup
A simple, fresh tomato soup made from garden tomatoes.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 6 cups Fresh Tomatoes, chopped
- 2 cups Vegetable Broth
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Fresh Basil, chopped
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Use a blender to puree the soup until smooth.
6. Season with salt and black pepper. Stir in chopped basil before serving.
