Ingredients 

Salad Ingredients

  • 8 oz pasta any short pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion thinly sliced
  • ½ cup kalamata olives pitted and halved
  • ½ cup feta cheese crumbled

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
