Ingredients 

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 can diced tomatoes (14.5 oz)
  • 2 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 bay leaves
  • 1 cup kalamata olives pitted and halved
  • 2 tablespoon fresh parsley chopped

Instructions 

  1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove beef and set aside.
  2. In the same pot, add onion and garlic. Cook until softened.
  3. Return beef to the pot. Add beef broth, red wine, diced tomatoes, oregano, thyme, salt, pepper, and bay leaves. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2 hours, or until beef is tender.
  5. Stir in kalamata olives and fresh parsley. Cook for an additional 10 minutes.
  6. Remove bay leaves and serve hot.
