Ingredients

  • 4 ears corn husked
  • 1 cup cherry tomatoes halved
  • 1 red onion diced
  • 1 cup cilantro chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Brush corn with olive oil and place on the grill. Cook for about 10-15 minutes, turning occasionally, until charred and tender.
  3. 3. Remove corn from grill and let cool slightly. Cut kernels off the cob and place in a large mixing bowl.
  4. 4. Add cherry tomatoes, red onion, cilantro, lime juice, salt, and black pepper to the bowl. Toss to combine.
  5. 5. Serve immediately or refrigerate until ready to serve.
