Ingredients

  • 2 cups Pineapple chunks
  • 1 cup Cooked ham, diced
  • 1 cup Shredded coconut
  • 1 cup Chopped macadamia nuts
  • 1 cup Mandarin orange segments
  • ½ cup Greek yogurt
  • 1 tablespoon Honey
  • 1 teaspoon Lime juice

Instructions 

  1. In a large mixing bowl, combine the pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, and mandarin orange segments.
  2. In a small bowl, whisk together the Greek yogurt, honey, and lime juice.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
