Ingredients 

Main Ingredients

  • 400 g Chuka soba noodles or any other type of ramen noodles
  • 1 cup Cucumber julienned
  • 1 cup Carrot julienned
  • 1 cup Ham julienned
  • 2 Eggs beaten and cooked into thin omelets, then julienned
  • 1 cup Bean sprouts blanched

Dressing Ingredients

  • 4 tablespoon Soy sauce
  • 4 tablespoon Rice vinegar
  • 2 tablespoon Sugar
  • 2 tablespoon Sesame oil
  • 1 tablespoon Mustard optional

Instructions 

  1. 1. Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. 2. Prepare the toppings: julienne the cucumber, carrot, and ham. Beat the eggs, cook into thin omelets, and julienne. Blanch the bean sprouts.
  3. 3. In a mixing bowl, combine soy sauce, rice vinegar, sugar, sesame oil, and mustard (if using) to make the dressing.
  4. 4. Arrange the noodles on a plate and top with the prepared toppings. Drizzle the dressing over the noodles and serve cold.
