Ingredients 

Main Ingredients

  • 1 lb chicken breast boneless, skinless
  • 4 cups chicken broth
  • 2 cups carrots sliced
  • 1 cup celery chopped
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon thyme dried
  • 1 teaspoon parsley dried

Instructions 

  1. 1. Turn on the Instant Pot and select the 'Sauté' function. Add a bit of oil and sauté the onions, carrots, and celery until softened.
  2. 2. Add the garlic and sauté for another minute.
  3. 3. Add the chicken breast, chicken broth, salt, pepper, thyme, and parsley.
  4. 4. Close the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high for 10 minutes.
  5. 5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6. Remove the chicken breast, shred it, and return it to the pot. Stir well and serve hot.
