Ingredients 

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup long grain rice
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 pcs bay leaves
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chicken and sausage, cooking until browned. Remove and set aside.
  2. 2. In the same pot, add the onion, bell pepper, celery, and garlic. Cook until softened.
  3. 3. Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  4. 4. Reduce heat, cover, and simmer for 20-25 minutes, or until rice is cooked.
  5. 5. Add the shrimp, chicken, and sausage back to the pot. Cook until shrimp is pink and cooked through. Season with salt and pepper to taste.
