Ingredients 

Main Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese cheddar or your choice
  • 1 egg beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • to taste salt and pepper
  • 2 tablespoon oil for frying

Instructions 

  1. In a mixing bowl, combine mashed potatoes, cheese, beaten egg, flour, and green onions. Season with salt and pepper.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop about ¼ cup of the potato mixture and form into a patty. Place in the hot pan.
  4. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Repeat with the remaining mixture, adding more oil to the pan as needed.
  6. Serve hot with your favorite toppings.
