  • ¼ cup Butter cubed
  • 1 tablespoon Lemon zest

Instructions 

  1. In a saucepan, whisk together eggs, sugar, and lemon juice.
  2. Cook over medium heat, stirring constantly, until the mixture thickens.
  3. Remove from heat and stir in butter and lemon zest until smooth.
  4. Transfer to a bowl and cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming.
  5. Let cool, then refrigerate until ready to use.
