Ingredients 

Main Ingredients

  • 1 cup Lentils
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. Rinse the lentils under cold water.
  2. 2. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until translucent.
  3. 3. Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes.
  4. 4. Add the rinsed lentils, vegetable broth, cumin, and paprika. Bring to a boil.
  5. 5. Reduce the heat and let it simmer for about 45 minutes or until the lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
